I was watching JVN's new Netflix Show last night Getting Curious with Jonathan Van Ness as he wondered if bugs are "gorgeous or gross".  The only thought I've ever had about bugs was to smash them with my shoe, but I must say by the end of the show, bugs actually made me hungry.

Do we need an insect restaurant in New Jersey?  They are all over New York City and they are expanding for many reasons. Yes, they serve insects as protein...I'll give you a minute to process that.

Chef Joseph Yoon has made quite a name for himself pushing the peculiar protein.  In fact, he's onto something that may very well save the planet.  Pound for pound bugs require less land, water, and food than livestock which of course creates fewer emissions. Of course, every living thing creates waste and theirs is actually super valuable (it is called frass btw), and it is an excellent fertilizer.  This could solve world hunger as we know it and save the environment if we could just wrap our minds around it.

And bugs are good for us!  Insects like grasshoppers, crickets, and mealworms are high in protein and have way higher counts of minerals such as iron, zinc, copper, and magnesium than steak. Ready to see some of Chef Joseph Yoon's creations?

Insect Restaurants Are Coming

Experts say we could cure world hunger and save the planet by eating bugs and chefs are making them look awfully tasty.

I think we need a restaurant in Jersey...what do you say Chef Yoon?  You're already bringing in the celebs and the rest of us are hangry too. Bug Appetit!
